Meal Prep :: Breakfast Edition

I had a coworker who used to meal prep on Sundays. She would prep dinner and lunches for most of the week and plate it for each member of her family. She’s a superhero. I tried this at one point, and it’s safe to say that I am much less of a superhero. But there is one meal that I have been able to successfully prep each week as we prepare for work and school on Sundays. 

To give you a glimpse into my world, I am a high school teacher with three kids between the ages of 5 years and 6 months. My school starts before my son’s elementary school. So that means everyone has to be dressed, fed, and ready for drop off by 7 so we can all get where we need to be on time. My husband and I are early risers, but mornings can be a bit chaotic. Which is why I meal prep breakfast! 

I found this idea on Pinterest when I was in college and trying to eat a little healthier while also sleeping as late as possible. At my house, we call them “Egg Cups.” 

What you’ll need:

  • cooking spray 
  • medium sized mixing bowl 
  • fork or whisk 
  • a 12 cup muffin tin 
  • a dozen eggs 
  • cheese, bacon, ham, veggies, or anything else you like in your eggs

Step 1: set your oven to 350 

Step 2: crack eggs into mixing bowl and scramble 

Step 3: spray muffin tin with cooking spray 

Step 4: pour egg mixture into muffin tin, fill each cup about halfway 

Step 5: add cheese, bacon, ham, veggies, etc to each cup

Step 6: bake in oven for 10-15 minutes

Step 7: let cool and then place in a large Tupperware in the fridge

Step 8: daily: take cups out and heat up in microwave or oven, and serve to your family 

My kids usually help me make them! They pick what they want in their eggs and we will either put them in separate containers or I’ll just do my best to remember who picked what for their eggs that week. It’s a quick and easy breakfast that is nutritious and ensures we can still get out of the door on time!
