Sweet Treats That Help Beat The Heat

It’s HOT! There is no debating that. As the temps rise, we are all searching for ways to beat the heat. Unfortunately, there isn’t much that one can do. One thing I love to do on these unbearable days is make popsicles for my kids. This is a two-fold victory, by making them myself I am able to control the ingredients and limit the sugar I give the kids. And this is a great way to cool off. As an added plus, the kids can help.

Basil Lime Watermelon Popsicles

  • Sweet Treats That Help Beat The Heat1 cup of fresh basil leaves
  • 1 cup of boiling water
  • 2 ½ cups of watermelon (no seeds)
  • 2 TBS of lime juice

Place basil into a small bowl, pour boiling water on top, muddle slightly to infuse flavors. Cover and let cool. Once the basil tea has cooled, remove the basil leaves and pour “tea” into blender and add watermelon and lime juice into a blender. Blend until smooth. Pour mixture into popsicle mold and freeze completely.

Strawberry Mint Popsicles

  • 3 cups of strawberries
  • 6-8 fresh mint leaves
  • 1 lemon zested
  • ½ cup lemon juice
  • ¼ cup of honey

Add all ingredients to a blender, and blend until smooth. Pour mixture into popsicle mold and freeze completely.

Spicy Pineapple Popsicles

  • 2 ½ cups of fresh pineapple
  • ¼ cup of sugar
  • 1 tbsp lime juic
  • 3 tbsp of Tajin
  • Place pineapple, sugar and lime juice in a blender and blend until smooth. Fill popsicle mold about 1/3 o the way up. Sprinkle in a small amount of Tajin and swirl it into the mixture. Repeat this process until the mold is full. Finish off the last layer with the Tajin without swirling. Freeze over night until completely frozen.

I should add that all of these can be made into an adult treat by simply adding rum or tequila.

Any of these are perfect for a lazy sunny day, backyard cookout, or sitting on your couch enjoying the air conditioner. I hope you try them and love them as much as my family does.
