Spring is upon us! That means longer days and warmer weather. If your life is as hectic as mine, that means days and nights at the soccer field, track, and dance practice. It leaves very little time to prepare meals to feed your family. I am sharing with you a quick and easy crockpot recipe that will save you from those fast-food lines.
Chicken Spaghetti
- 3-4 chicken breast
- 1 jar of your favorite spaghetti sauce
- 1 jar of your favorite alfredo sauce
- sliced mushrooms (optional)
- 1 can of Rotel tomatoes (optional)
- Tonys (or your favorite seasoning blend)
- Italian seasoning
- salt (to taste)
- Garlic powder
- Onion powder
- Pasta (any kind)
- Parmesan cheese (optional)
Add chicken breast to crockpot. Pour both jars of sauce on top. Add a little water to each jar and shake, and pour water into the crockpot. If using mushrooms and/or Rotel, add to crockpot. Add all dry seasoning to your liking. Stir and set the crockpot on high for 3 – 4 hours. The sauce is done when the chicken is tender, and you can shred it. Shred the chicken, and serve over pasta, spaghetti squash, or zoodles. Top with parmesan cheese.
*If you want to sneak in some veggies, add fresh chopped spinach. Shhh, don’t tell them and they will never know!
You can serve this meal with a veggie, green salad, or garlic bread. It also freezes very well. Make a batch in advance and thaw when ready and serve over pasta.
