The Viral Salad You Must Try
If you can’t tell by now, I am really into my health and wellness journey. Being a foodie, makes this journey a little harder. While I have learned to eat to live and not live to eat, I still like to eat! So, I am always willing to try new healthy recipes that I come across. Last fall, I came across the viral ‘Hot Girl Summer’ salad, and I must say, I am a fan.
Hot Girl Summer Salad
2 Cucumbers, peeled and diced
2 Green Bell Peppers, diced
½ Red Onion, finely diced
4 Hard Boiled Eggs, peeled and chopped
¾ cup Zesty Italian Dressing
½ cup Pepperocinci Peppers, sliced
¼ cup Roasted Sunflower Kernels
½ teaspoon Garlic Powder
½ teaspoon Paprika
¼ teaspoon Black Pepper
Chop the cucumbers, bell peppers, onion, and eggs. Add to a large bowl. Add the dressing, pepperoncini peppers, sunflower kernels, garlic powder, paprika, and ground black pepper. Toss until evenly combined. Serve chilled.
I have seen multiple variations of this recipe on social media. I have seen the salad dressing substituted with Balsamic Vinegarette, a homemade vinegarette, or even Olive Garden salad dressing. I have had friends add a protein like shredded chicken or shrimp to it. You can also add other veggies to the mixture. As with any recipe, you can make it your own.
Whether you are trying to drop pounds or not this salad is the perfect warm weather salad. It is a great healthy dish to bring to the cookout or potluck. I hope you enjoy it as much as I do. Bon Appetite!
