Easy Peasy Potluck Ideas

We are right in the thick of the holiday season. This is the time of the year when everyone wants to get together to celebrate. And here in South Louisiana, we don’t know how to celebrate without food. But what do you bring? I am going to share three no fail easy peasy potluck ideas that will save you some time and have people raving.

Caprese SkewersEasy Peasy Potluck Ideas

  • 24 red cherry tomatoes
  • 12 yellow cherry tomatoes
  • 24 bite sized fresh mozzarella balls
  • 36 small basil leaves
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 1 /2 tablespoons balsamic glaze
  • salt and pepper to taste
Start with 12 6-inch skewers. Thread the tomatoes, basil and mozzarella onto the skewers in an alternating pattern.
In a small bowl, mix together the olive oil, Italian seasoning and salt and pepper to taste.
Arrange the skewers on a plate and drizzle with the olive oil mixture.
Place the balsamic glaze in a small plastic bag with one corner snipped off. Drizzle the balsamic over the skewers, then serve.

Cowboy Caviar

  • 1 (15.5 ounce) can black beans, drained
  • 1 (15.5 ounce) can black-eyed peas, drained
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 2 cups frozen corn kernels, thawed
  • ½ medium onion, diced
  • ¼ medium green bell pepper, finely chopped
  • ½ cup chopped pickled jalapeño peppers
  • ½ teaspoon garlic salt
  • 1 cup Italian salad dressing
  • ¾ cup chopped cilantro

Mix black beans, black-eyed peas, diced tomatoes, corn, onion, bell pepper, and jalapeño peppers together in a large bowl.

Season with garlic salt, then pour in Italian salad dressing and add cilantro. Mix until well coated.

Refrigerate until flavors have melded, at least 20 minutes or up to 3 days, before serving.

Serve with tortilla or pita chips.

Garlic Parm Olive Oil Bread Dip

  • 2 cloves of garlic (minced or crushed)
  • 1 tablespoon Parmesan cheese (grated)
  • ½ teaspoon sea salt
  • add sprinkle ground black pepper
  • add sprinkle of red pepper flakes
  • 4 tablespoons olive oil
Combine fresh garlic, Parmesan cheese, sea salt and ground black pepper in a small, shallow dish.
When ready to serve, pour a quality olive oil into the spices blend.
Serve with your choice of bread.

You can’t go wrong with any of these make ahead ideas. They are all easy on the wallet and simple to make. You can always go the store-bought route, but that can possibly be more expensive. If all else fails sign up for the plates and napkins!
